Chicken Milanese
I created this chicken Milanese since I couldn't find a recipe that worked with spaghetti. It's crispy, quick to prepare, and tasty!

- 4 boneless skinless chicken breasts
- Salt and pepper
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Olive oil for frying
- Lemon wedges for serving
- Fresh parsley chopped, for garnish
Place the chicken breasts between plastic wrap and gently pound to an even thickness. Season with salt and pepper.
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan.
Dredge each chicken breast in flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
Heat olive oil in a skillet over medium-high heat. Add the breaded chicken breasts and cook until golden brown and cooked through, about 3-4 minutes per side.
Transfer the chicken to a paper towel-lined plate to drain excess oil.
Serve the chicken Milanese hot, garnished with lemon wedges and chopped parsley.
