Chicken Milanese

I created this chicken Milanese since I couldn't find a recipe that worked with spaghetti. It's crispy, quick to prepare, and tasty!

Materials

  • 4 boneless skinless chicken breasts
  • Salt and pepper
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Olive oil for frying
  • Lemon wedges for serving
  • Fresh parsley chopped, for garnish

Instructions

  • Place the chicken breasts between plastic wrap and gently pound to an even thickness. Season with salt and pepper.
  • Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan.
  • Dredge each chicken breast in flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
  • Heat olive oil in a skillet over medium-high heat. Add the breaded chicken breasts and cook until golden brown and cooked through, about 3-4 minutes per side.
  • Transfer the chicken to a paper towel-lined plate to drain excess oil.
  • Serve the chicken Milanese hot, garnished with lemon wedges and chopped parsley.
