- - 4 bone-in pork chops about 1 inch thick
- - 1 teaspoon salt
- - 1 teaspoon black pepper
- - 1/2 cup all-purpose flour for dredging
- - 4 tablespoons vegetable oil
- - 1 large onion thinly sliced
- - 2 cloves garlic minced
- - 2 cups chicken broth
- - 1 teaspoon paprika
- - 1/2 teaspoon dried thyme
- - 2 tablespoons Worcestershire sauce
- - 1 cup buttermilk
- - 2 tablespoons all-purpose flour for gravy
Season pork chops with salt and pepper, then dredge in 1/2 cup flour.
Heat oil in a large skillet over medium-high heat. Add pork chops and cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
In the same skillet, add onions and garlic; sauté until soft.
Stir in 2 tablespoons flour, then gradually whisk in chicken broth to avoid lumps. Add paprika, thyme, and Worcestershire sauce. Bring to a simmer.
Return pork chops to the skillet, cover, and simmer on low heat for 30 minutes, or until pork chops are tender.
Stir in buttermilk and cook for an additional 5 minutes, adjusting seasoning if necessary.
