Materials

  • 1 1/2 lbs pork belly cut into bite-sized pieces
  • 4 teaspoons Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons apple cider vinegar
  • 3 tablespoons canola oil

Instructions

  • Preheat the oven to 375°F (190° C).
  • In a small mixing bowl, blend the Dijon mustard, pure maple syrup, black pepper, kosher salt, and apple cider vinegar until thoroughly incorporated.
  • Put the pork belly bits into a large mixing basin. Pour the maple mustard mixture over the pork belly bites and toss until evenly coated.
  • Heat the canola oil in a large oven-safe skillet over medium-high heat.
  • When the oil is heated, gently place the pork belly bits on the skillet, ensuring sure they are in a single layer and not overcrowded. If your pan isn't large enough, you might have to fry them in batches.
  • Sear the pork belly bites on all sides until they are golden brown and caramelized, about 2-3 minutes per side.
  • Once the pork belly bites are seared, transfer the skillet to the preheated oven.
  • Roast the pork belly bites in the oven for 20-25 minutes, or until they are cooked through and the edges are crispy.
