Creamy Cheesy Chicken Tacos

Ingredients:

  • 4 boneless, skinless chicken breasts, baked until well cooked
  • 8 ounces cream cheese, at room temperature
  • 1 packet of taco seasoning
  • 1 cup grated Fiesta cheese
  • 8 to 10 corn tortillas

Optional Extras:

  • Lettuce
  • Onion
  • Chopped tomatoes
  • Salsa
  • Sour cream
  • Guacamole

Directions:

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C).
  2. Put 1 tablespoon of oil in a frying pan and set it aside.

Step 2: Prepare the Chicken

  1. After the chicken is completely cooked through, shred it using two forks.
  2. In a bowl, mix the cream cheese and taco seasoning until well combined.
  3. Stir the shredded chicken into the cream cheese mixture, ensuring the chicken is thoroughly coated.

Step 3: Warm the Tortillas

  1. Place the corn tortillas in the hot oiled skillet for just a few seconds to heat up. Remove the tortillas and set them aside, repeating with the remaining tortillas.

Step 4: Assemble and Bake

  1. Spray a baking sheet with non-stick spray.
  2. Put a spoonful of the chicken mixture in the center of each tortilla and roll it up.
  3. Place each rolled corn tortilla on the baking sheet.

Step 5: Bake and Add Cheese

  1. Bake in the preheated oven for 20 to 30 minutes.
  2. Remove the baking sheet, sprinkle the tortillas with the Fiesta cheese mixture, and return to the oven for another 5 minutes.

Step 6: Serve

  1. Remove the tortillas from the oven. Arrange the tortillas on a serving plate lengthwise in the shape of a circle, leaving the middle open.
  2. In the middle, place a bowl filled with diced tomatoes, salsa, sour cream, or guacamole.
  3. Add a layer of shredded lettuce around the tortillas if desired.
