Materials

  • - 2 cups crushed graham crackers
  • - 1/2 cup unsalted butter melted
  • - 2 cups fresh strawberries hulled and halved
  • - 1/4 cup sugar
  • - 1 tablespoon lemon juice
  • - 2 cups cream cheese softened
  • - 1/2 cup powdered sugar
  • - 1 teaspoon vanilla extract
  • - 1 cup heavy cream whipped
  • - 1/2 cup strawberry jam
  • - 1/4 cup freeze-dried strawberries crushed

Instructions

  • Mix crushed graham crackers with melted butter and press into the bottom of a springform pan. Chill in the refrigerator for 30 minutes.
  • Blend fresh strawberries, sugar, and lemon juice in a food processor until smooth.
  • Beat cream cheese, powdered sugar, and vanilla extract in a bowl until smooth. Fold in whipped cream and strawberry mixture.
  • Pour half of the cream cheese mixture over the crust. Swirl half of the strawberry jam into the mixture. Repeat with remaining cream cheese mixture and jam.
  • Chill in the refrigerator for at least 4 hours, or until set.
  • Before serving, sprinkle the top with crushed freeze-dried strawberries.
