Strawberry Crunch Cheesecake

Make this No-Bake Strawberry Crunch Cheesecake for a cool summer treat that’s both easy and delicious!

Ingredients

– 2 cups crushed graham crackers

– 1/2 cup unsalted butter, melted

– 2 cups fresh strawberries, hulled and halved

– 1/4 cup sugar

– 1 tablespoon lemon juice

– 2 cups cream cheese, softened

– 1/2 cup powdered sugar

– 1 teaspoon vanilla extract

– 1 cup heavy cream, whipped

– 1/2 cup strawberry jam

– 1/4 cup freeze-dried strawberries, crushed

Directions

1. Mix crushed graham crackers with melted butter and press into the bottom of a springform pan. Chill in the refrigerator for 30 minutes.

2. Blend fresh strawberries, sugar, and lemon juice in a food processor until smooth.

3. Beat cream cheese, powdered sugar, and vanilla extract in a bowl until smooth. Fold in whipped cream and strawberry mixture.

4. Pour half of the cream cheese mixture over the crust. Swirl half of the strawberry jam into the mixture. Repeat with remaining cream cheese mixture and jam.

5. Chill in the refrigerator for at least 4 hours, or until set.

6. Before serving, sprinkle the top with crushed freeze-dried strawberries.
