Materials

For the Fritters:

  • · 2 cups 250g all-purpose flour
  • · 1/3 cup 67g granulated sugar
  • · 1 tablespoon baking powder
  • · 1 ½ teaspoons ground cinnamon
  • · ¼ teaspoon ground nutmeg
  • · ½ teaspoon salt
  • · 1 large egg
  • · ¾ cup 180ml milk
  • · ¼ cup 57g unsalted butter, melted and cooled
  • · 1 teaspoon vanilla extract
  • · 2 medium apples Granny Smith or Honeycrisp, peeled and finely chopped or grated (about 2 cups)

For the Cinnamon Sugar Coating:

  • · ½ cup 100g granulated sugar
  • · 1 tablespoon ground cinnamon
  • · 3 tablespoons butter melted

For the Glaze:

  • · 1 cup 120g powdered sugar
  • · 2-3 tablespoons milk
  • · ½ teaspoon vanilla extract

Instructions

  • Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Toss chopped apples with 1 tsp of the measured flour.
  • Make Batter: In a large bowl, whisk flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, whisk egg, milk, melted butter, and vanilla. Pour wet into dry and stir until just combined. Fold in apples.
  • Shape & Bake: Drop 1/4-cup mounds of batter onto the sheet. Gently shape into 1/2-inch thick discs. Bake 15-18 mins until golden and set.
  • Coat: Mix sugar and cinnamon for coating. Brush warm fritters with melted butter, then roll in cinnamon sugar. Place on a wire rack.
  • Glaze: Whisk powdered sugar, 2 tbsp milk, and vanilla. Add more milk as needed for a thick but drizzle-able glaze. Drizzle over fritters. Let set for 5 minutes before serving. Enjoy warm!
