- - 1 pound sirloin steak cut into cubes
- - 4 large eggs
- - 4 tablespoons butter
- - 3 cloves garlic minced
- - Salt and pepper to taste
- - Fresh parsley chopped (for garnish)
Season the steak cubes with salt and pepper to taste.
Heat a large skillet over medium-high heat and melt 2 tablespoons of butter.
Add the steak cubes to the skillet in a single layer, working in batches if necessary. Cook for 3-4 minutes, turning occasionally, until browned on all sides. Remove the steak from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Cook for 1-2 minutes, or until the garlic is fragrant but not burned.
Return the steak bites to the skillet and toss to coat with the garlic butter. Cook for an additional 1-2 minutes.
In a separate non-stick skillet, fry the eggs to your preference.
