Materials

  • Dry ingredients:
  • 1/2 cup oat flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • Wet ingredients:
  • 3 medium extra-ripe mashed bananas 1 1/2 cups mashed well
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar-free semi-sweet chocolate chips divided (Such as Lily’s) or chocolate chips of choice

Instructions

  • Grease a 9x4 loaf pan and preheat the oven to 350 degrees. To make it easier to remove, you may line the pan with a 9 × 9-inch piece of parchment paper.
  • Combine the oat flour, cocoa powder, baking soda, baking powder, and salt in a medium-sized basin.
  • Mash the bananas till smooth and liquidy in a big basin. Add the eggs, vanilla, and maple syrup.
  • Mixing until well blended, add the dry ingredients to the wet mixture. Add 1/2 cup chocolate chips and stir.
  • Transfer the mixture into the loaf pan that has been ready, cover it with the leftover chocolate chips, and bake it for 45 to 55 minutes, or until a toothpick inserted into it comes out clean.
  • Before slicing, remove from the loaf pan and allow it to cool for fifteen minutes.
