- Dry ingredients:
- 1/2 cup oat flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- Wet ingredients:
- 3 medium extra-ripe mashed bananas 1 1/2 cups mashed well
- 2 large eggs
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 3/4 cup sugar-free semi-sweet chocolate chips divided (Such as Lily’s) or chocolate chips of choice
Grease a 9x4 loaf pan and preheat the oven to 350 degrees. To make it easier to remove, you may line the pan with a 9 × 9-inch piece of parchment paper.
Combine the oat flour, cocoa powder, baking soda, baking powder, and salt in a medium-sized basin.
Mash the bananas till smooth and liquidy in a big basin. Add the eggs, vanilla, and maple syrup.
Mixing until well blended, add the dry ingredients to the wet mixture. Add 1/2 cup chocolate chips and stir.
Transfer the mixture into the loaf pan that has been ready, cover it with the leftover chocolate chips, and bake it for 45 to 55 minutes, or until a toothpick inserted into it comes out clean.
Before slicing, remove from the loaf pan and allow it to cool for fifteen minutes.
