Crispy Potato Fritters with Garlic Dip

For the Potato Fritters:
- - 4 large potatoes peeled and grated
- - 1 medium onion finely chopped
- - 2 eggs beaten

For the Garlic Dip:
- - 1 cup sour cream or Greek yogurt
- - 2 cloves garlic minced
- - 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)

Prepare the Fritters:
- Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to ensure the fritters are crispy.
- In a large mixing bowl, combine the grated potatoes, chopped onion, beaten eggs, flour, salt, pepper, and paprika (if using). Mix well until all ingredients are thoroughly combined.
Fry the Fritters:
