Materials

For the Potato Fritters:

  • - 4 large potatoes peeled and grated
  • - 1 medium onion finely chopped
  • - 2 eggs beaten
  • - 1/2 cup all-purpose flour
  • - Salt and pepper to taste
  • - 1/2 teaspoon paprika optional
  • - Vegetable oil for frying

For the Garlic Dip:

  • - 1 cup sour cream or Greek yogurt
  • - 2 cloves garlic minced
  • - 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • - Salt and pepper to taste
  • - 1/4 teaspoon paprika for garnish optional

Instructions

Prepare the Fritters:

  • - Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to ensure the fritters are crispy.
  • - In a large mixing bowl, combine the grated potatoes, chopped onion, beaten eggs, flour, salt, pepper, and paprika (if using). Mix well until all ingredients are thoroughly combined.

Fry the Fritters:

  • - Heat vegetable oil in a large skillet over medium-high heat.
  • - Scoop about 2 tablespoons of the potato mixture and flatten it into a patty. Carefully place the patty in the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
  • - Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels to remove excess oil.

Prepare the Garlic Dip:

  • - In a small bowl, combine the sour cream or Greek yogurt, minced garlic, chopped dill, salt, and pepper. Mix well.
  • - Garnish with a sprinkle of paprika if desired.
