Materials

  • - 4 salmon fillets about 6 ounces each
  • - 2 pounds small potatoes quartered
  • - 3 tablespoons olive oil divided
  • - 4 cloves garlic minced
  • - 1 teaspoon dried rosemary
  • - 1 teaspoon dried thyme
  • - Salt and pepper to taste
  • - 2 tablespoons fresh parsley chopped for garnish
  • - Lemon wedges for serving

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the potatoes with 2 tablespoons olive oil, garlic, rosemary, thyme, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until crispy and golden.
  • While the potatoes are roasting, season the salmon fillets with salt and pepper.
  • Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for 5-6 minutes until the skin is crispy. Flip the fillets and cook for another 4-5 minutes, or until desired doneness.
  • Serve the salmon with the roasted potatoes, garnished with fresh parsley and lemon wedges on the side.
