Materials

  • 2 tablespoons olive oil
  • 1 lb Italian ground sausage
  • ½ lb 8 ounces ground beef- I use 90% lean
  • 1 medium yellow onion chopped
  • 1 tablespoon garlic paste or 6 garlic cloves finely minced
  • 3 tablespoons tomato paste
  • 1 28-ounce can crushed tomatoes
  • 1 tablespoon dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon smoked paprika
  • ½ teaspoon chipotle powder or crushed red pepper
  • ¼ teaspoon ground nutmeg
  • Kosher salt & freshly ground black pepper- to taste
  • 1 tablespoon worcestershire sauce
  • 12 lasagna strips roughly broken into pieces
  • 7 cups chicken broth

For the cheese topping:

  • ½ cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped parsley
  • Fresh grated parmesan for serving- optional

Instructions

  • Add the oil to a large stockpot or Dutch oven set over medium heat. Swirl the pot gently to cover the entire bottom when it's heated. Stir in the ground beef and sausage, breaking up the meat with a wooden tool. Cook the meat for a further 7 to 8 minutes, tossing often, or until it is well browned and beginning to crisp up.
  • After that, add the chopped onion and sauté it for a further three to four minutes, along with the browned beef combination, until the onion is soft. Once fragrant, add the garlic and cook for an additional minute, stirring thoroughly to blend it with the meat mixture.
  • Add the tomato paste and stir until the meat is fully combined. Next, include the crushed tomatoes, worcestershire sauce, oregano, basil, paprika, chipotle powder, nutmeg, and salt & pepper to taste. Mix everything up thoroughly. Stir thoroughly to mix in the broth and the broken lasagna pieces.
  • After lowering the heat to medium-low, simmer the soup for ten to fifteen minutes, or until the lasagna noodles are soft and thoroughly cooked, stirring from time to time.
  • About the cheese garnish: Mix the mozzarella, ricotta, and chopped parsley in a medium-sized bowl. After giving the mixture a good stir, put it aside until the soup is done.
  • Spoon the lasagna soup into each serving bowl, then dollop some of the cheese mixture on top. When you mix in the cheese topping, the hot soup will melt it and everything will come together wonderfully. If preferred, top with freshly grated parmesan cheese for an even cozier presentation. Have fun!
