- 2 lbs Yukon gold potatoes peeled and cubed, 4 medium
- 4 large garlic cloves peeled and halved
- 1/4 cup light sour cream
- 1/2 cup chicken broth sub vegetable broth for vegetarian
- 1/4 cup fat free milk
- 1 tbsp whipped butter
- kosher salt to taste
- fresh ground black pepper to taste
- 1 tbsp fresh herbs such as parsley thyme or chives
Place the potatoes and garlic in a big saucepan with enough salt and water to cover. Bring to a boil.
Cover and lower the heat. Simmer for 20 minutes, until the potatoes are soft.
Drain the potatoes and garlic and return them to the pan over low heat. Combine sour cream and the remaining ingredients. Mash with a masher until smooth, and if it's too watery, simmer for a few minutes to achieve the desired texture.
Season with salt and pepper to taste. Garnish with herbs.
