Rice and spinach cheese combine to make gluten-free spinach balls that make a perfect, kid-friendly snack!

Materials

package Veetee Rice or other rice of your choice
½
cup
defrosted chopped spinach squeezed dry
or more to taste
Heaping ¼ cup Parmesan cheese
Heaping ¼ cup Mozzarella cheese
Kosher salt & black pepper
1-2
TBS
grapeseed or olive oil
Instructions
Follow the directions on the package to cook your rice.
Mix the rice, spinach, cheeses, and spices together in a bowl.
While mixture is still warm, roll into balls.
Heat oil in a nonstick skillet and cook Spinach and Rice Balls for a few minutes, until edges are a touch toasted and balls are heated through.
Present and savor!
