(Gluten Free) Spinach & Rice Balls

Rice and spinach cheese combine to make gluten-free spinach balls that make a perfect, kid-friendly snack!

Materials

  • 10 package Veetee Rice or other rice of your choice
  • ½ cup defrosted chopped spinach squeezed dry or more to taste
  • Heaping ¼ cup Parmesan cheese
  • Heaping ¼ cup Mozzarella cheese
  • Kosher salt & black pepper
  • 1-2 TBS grapeseed or olive oil

Instructions

  • Follow the directions on the package to cook your rice.
  • Mix the rice, spinach, cheeses, and spices together in a bowl.
  • While mixture is still warm, roll into balls.
  • Heat oil in a nonstick skillet and cook Spinach and Rice Balls for a few minutes, until edges are a touch toasted and balls are heated through.
  • Present and savor!
