Materials

  • 1 peach sliced in half
  • 3-4 Roma tomatoes
  • 1 sweet onion quartered
  • 1 jalapeƱo seeded cut in half
  • 4-5 cloves of garlic
  • 1/2 tsp salt
  • Juice from 1 lime
  • Handful of fresh cilantro

Instructions

  • Melt butter in a cast iron pan over medium-high heat. Apply oil to the surface. Mix in the tomatoes, onion, jalapeos, garlic, and peaches.
  • Using tongs, turn them frequently until they are scorched all over, about 5-8 minutes. Cover and set aside to enable the veggies to soften and cool.
  • Put all of the charred veggies in a food processor.Season with salt and pepper. Pulse a few times to include the lime juice and fresh cilantro. The salsa should retain its texture.Taste and adjust the seasoning, then transfer to a dish and serve with tortilla chips.
