- 1 peach sliced in half
- 3-4 Roma tomatoes
- 1 sweet onion quartered
- 1 jalapeƱo seeded cut in half
- 4-5 cloves of garlic
- 1/2 tsp salt
- Juice from 1 lime
- Handful of fresh cilantro
Melt butter in a cast iron pan over medium-high heat. Apply oil to the surface. Mix in the tomatoes, onion, jalapeos, garlic, and peaches.
Using tongs, turn them frequently until they are scorched all over, about 5-8 minutes. Cover and set aside to enable the veggies to soften and cool.
