Materials

  • - 1 ½ pounds lean ground beef
  • - Salt and pepper to taste
  • - 3 tsp olive oil
  • - 1 cup chopped green pepper
  • - 1 cup chopped red pepper
  • - 1 cup onion chopped
  • - 1 can Rotel green chiles with diced tomatoes your choice of Hot or Mild
  • - 4 pita breads softened and warmed slightly
  • - ½ cup sour cream
  • - ¼ cup bleu cheese crumbles

Instructions

Warm the Pitas:

  • - Slightly warm the pita breads in the microwave to make them more pliable.

Cook the Beef Mixture:

  • - In a large skillet, crumble the ground beef and add olive oil, green peppers, red peppers, and onions.
  • - Cook over medium heat until the beef is no longer pink and the peppers and onions have softened.
  • - Add the can of Rotel (with green chiles and diced tomatoes) to the skillet and stir well to combine.
  • - Season with salt and pepper to taste.

Assemble the Gyros:

  • - Layout four sheets of aluminum foil on a flat surface.
  • - Place a warmed pita bread on each sheet of foil.
  • - Divide the meat mixture evenly among the four pitas, placing it in the center of each.
  • - Using the aluminum foil, roll up each pita with the meat mixture inside, wrapping it up snugly.

Add Toppings:

  • - Top each gyro with a dollop of sour cream and a sprinkle of bleu cheese crumbles, if desired.
