Honey Roasted Apples and Potatoes

- 3 medium russet potatoes
- 3 golden delicious apples
- 1/4 cup unsalted butter softened
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1 tablespoon fresh lemon juice
- 1/2 cup honey
Set the oven's temperature to 375.
After removing the apple cores, chop the potatoes and apples into 1-inch slices.
Apply cooking spray to a 13 x 9-inch baking dish.
Add the butter, pepper, and salt to the potatoes and apples.
Arrange the potatoes and apples in the baking dish.
Bake, uncovered, for twenty minutes.
Add the lemon juice and honey to the potatoes and apples and toss.
Roast the apples for a further 20 to 25 minutes, or until they are soft and golden brown.
