A tasty side dish that's both quick and spectacular to make is honey-roasted apples and potatoes. Sweet apples and russet potatoes roasted and drizzled with honey butter lemon glaze.

Materials

  • 3 medium russet potatoes
  • 3 golden delicious apples
  • 1/4 cup unsalted butter softened
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 tablespoon fresh lemon juice
  • 1/2 cup honey

Instructions

  • Set the oven's temperature to 375.
  • After removing the apple cores, chop the potatoes and apples into 1-inch slices.
  • Apply cooking spray to a 13 x 9-inch baking dish.
  • Add the butter, pepper, and salt to the potatoes and apples.
  • Arrange the potatoes and apples in the baking dish.
  • Bake, uncovered, for twenty minutes.
  • Add the lemon juice and honey to the potatoes and apples and toss.
  • Roast the apples for a further 20 to 25 minutes, or until they are soft and golden brown.
