Materials

  • - 4 large baking potatoes
  • - 1 tablespoon olive oil
  • - Salt and pepper to taste
  • - 1 cup shredded cheddar cheese
  • - 1/2 cup sour cream
  • - 4 slices bacon cooked and crumbled
  • - 2 green onions sliced
  • - 1/4 cup butter melted
  • - 1/4 teaspoon garlic powder

Instructions

  • Preheat oven to 400°F (200°C).
  • Scrub the potatoes and pat dry. Prick them several times with a fork, then rub with olive oil and season with salt and pepper.
  • Place the potatoes on a baking sheet and bake for 50-60 minutes, or until tender.
  • Cut a slit in the top of each potato and gently squeeze the sides to open. Remove a bit of the flesh to create a cavity.
  • In a bowl, mix half of the shredded cheese, sour cream, bacon, green onions, melted butter, and garlic powder. Season with salt and pepper.
  • Spoon the mixture into the potatoes, then top with the remaining cheese.
  • Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
