Yield: 2
- - 2 ribeye steaks about 1 inch thick
- - 4 large eggs
- - Salt and pepper to taste
- - 2 tablespoons olive oil
- - 1 tablespoon butter
- - Fresh herbs such as rosemary and thyme for garnish
Let steaks rest at room temperature for about 30 minutes. Season both sides generously with salt and pepper.
Heat a grill or skillet over high heat. Add 1 tablespoon olive oil and sear steaks for about 4-5 minutes per side for medium-rare, or until desired doneness.
Rest steaks for 5-10 minutes before slicing.
While steaks are resting, heat a non-stick pan over medium heat. Add butter and crack eggs into the pan, being careful not to break the yolks.
Cook eggs until the whites are set but yolks are still runny, about 2-3 minutes. Season with salt and pepper.
Serve steaks with sunny-side up eggs on top, garnished with fresh herbs.
