Materials

  • - 2 ribeye steaks about 1 inch thick
  • - 4 large eggs
  • - Salt and pepper to taste
  • - 2 tablespoons olive oil
  • - 1 tablespoon butter
  • - Fresh herbs such as rosemary and thyme for garnish

Instructions

  • Let steaks rest at room temperature for about 30 minutes. Season both sides generously with salt and pepper.
  • Heat a grill or skillet over high heat. Add 1 tablespoon olive oil and sear steaks for about 4-5 minutes per side for medium-rare, or until desired doneness.
  • Rest steaks for 5-10 minutes before slicing.
  • While steaks are resting, heat a non-stick pan over medium heat. Add butter and crack eggs into the pan, being careful not to break the yolks.
  • Cook eggs until the whites are set but yolks are still runny, about 2-3 minutes. Season with salt and pepper.
