- 1 tsp olive oil
- 4 6 ounce pieces white fish fillets flounder, fluke, tilapia
- 3/4 cup onion chopped
- 2 cloves garlic minced
- 3/4 cup diced green bell pepper
- 2 1/2 cups tomatoes chopped
- 1 tbsp Cajun spice seasoning
Cook the onion and garlic in olive oil over medium heat for a few minutes, or until softened.
Stir in the tomatoes, peppers, and spices, and simmer until the tomatoes are tender, about 2-3 minutes.
Place the fish fillets in the sauce, cover, and simmer on medium-low for about 12-15 minutes, or until easily flaked.
To serve, lay the fish on a platter and ladle sauce on top. Serve immediately.
