Preheat the oven to 375° Fahrenheit (190° Celsius).
Create a pocket in each chicken breast by cutting along the sides. Take cautious not to cut all the way through.
In a bowl, combine the ricotta cheese, spinach, Parmesan cheese, garlic, salt, and pepper.
Stuff each chicken breast with the ricotta mixture, securing with toothpicks if needed.
Season the exterior of the chicken with salt, pepper, and dried Italian herbs.
In a large skillet, heat olive oil over medium heat. Sear the chicken until golden brown on each side, which should take around 3-4 minutes.
Bake the skillet for 20-25 minutes, or until the chicken is well done.
Rest for 5 minutes before serving.
