Materials

  • - 4 large eggs
  • - 1/4 cup milk
  • - 1/2 cup shredded cheddar cheese
  • - 4 slices bacon
  • - 2 large potatoes diced
  • - 1/2 onion chopped
  • - 1 cup waffle batter prepared from your favorite mix
  • - Salt and pepper to taste
  • - 2 tbsp olive oil
  • - 1 tsp paprika optional for potatoes

Instructions

  • Preheat your oven to 400°F (200°C) for the potatoes. Toss diced potatoes and chopped onion with olive oil, paprika, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until crispy.
  • While potatoes are baking, whisk eggs, milk, salt, and pepper in a bowl. Heat a non-stick pan over medium heat, pour in the egg mixture. Sprinkle shredded cheese over eggs. Gently scramble until fully cooked.
  • Cook bacon in a separate pan until crispy. Drain on paper towels.
