  • - 1 lb ground beef
  • - 2 large potatoes peeled and cubed
  • - 1 onion finely chopped
  • - 2 cloves garlic minced
  • - 1 bell pepper diced
  • - 1 can 14.5 oz diced tomatoes, drained
  • - 1/4 cup raisins optional
  • - 1/4 cup green olives sliced
  • - 2 tablespoons olive oil
  • - 1 teaspoon cumin
  • - 1 teaspoon oregano
  • - Salt and pepper to taste
  • - 1/2 cup beef broth or water
  • - Fresh cilantro for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the onions and garlic, sautéing until softened, about 2-3 minutes.
  • Increase the heat to medium-high and add the ground beef, breaking it apart with a spoon. Cook until browned.
  • Stir in the diced bell pepper, cumin, oregano, salt, and pepper. Cook for another 2 minutes.
  • Add the potatoes, diced tomatoes, beef broth, raisins, and olives. Bring to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the potatoes are tender.
  • Garnish with fresh cilantro before serving.
