Today I’m cooking comfort food in the slow cooker! Ham, green beans, and potatoes form the ideal warm supper.
Ingredients:
– 2 pounds fresh green beans, trimmed
– 3 pounds potatoes, cubed
– 1 onion, chopped
– 4 cups chicken broth
– 2 tablespoons butter
– Salt and pepper to taste
Directions:
Place the cubed ham at the bottom of the slow cooker.
Add the trimmed green beans and cubed potatoes on top of the ham.
Scatter the chopped onion over the green beans and potatoes.
Pour the chicken broth over the ingredients in the slow cooker, ensuring that it covers the vegetables and ham.
Dot the top with butter and season with salt and pepper to taste.
Cover and cook on low for 6-8 hours, or until the potatoes are tender and the green beans are cooked to your liking.
