Southern Fried Potatoes and Sausage

With this skillet full of flavorful sausage and crunchy potatoes, you’ll feel right at home in the South. Ideal for every meal of the day!

**Ingredients:**

1.5 pounds of potatoes, peeled and diced

– 1 pound of smoked sausage, sliced

– 1 large onion, diced

– 2 tablespoons of vegetable oil

– 1/2 teaspoon of paprika

– Salt and pepper to taste

– 1/4 cup of water

– 2 tablespoons of fresh parsley, chopped (optional for garnish)

**Directions:**

1. Heat the vegetable oil in a large skillet over medium heat.

2. Add the diced potatoes to the skillet, cover, and cook for 10 minutes, stirring occasionally.

3. Add the sliced sausage and diced onion to the skillet. Sprinkle paprika, salt, and pepper over the mixture. Stir to combine.

4. Pour the water into the skillet, then cover and simmer for another 10-15 minutes, or until the potatoes are tender and the water has evaporated.

5. Remove the lid, increase the heat to medium-high, and cook for an additional 5 minutes, or until the potatoes and sausage are nicely browned.

6. Garnish with fresh parsley before serving, if desired.
