Cajun Shrimp Scampi

Spice up your meal with this Cajun Shrimp Scampi! It’s the ideal evening meal: simple, fast, and packed with flavor.

**Ingredients:**

– 1 pound large shrimp, peeled and deveined

– 2 tablespoons olive oil

– 3 garlic cloves, minced

– 1/2 cup chicken broth

– 1 tablespoon Cajun seasoning

– 1 teaspoon red pepper flakes (adjust to taste)

– 1/4 cup lemon juice

– 2 tablespoons fresh parsley, chopped

– Salt to taste

– Freshly ground black pepper to taste

– 1/2 cup grated Parmesan cheese

– 8 ounces linguine pasta, cooked al dente

**Directions:**

1. In a large skillet, heat olive oil over medium-high heat.

2. Add garlic and sauté for about 1 minute, until fragrant.

3. Add the shrimp and cook for 2-3 minutes on each side, until pink and cooked through.

4. Remove shrimp from the skillet and set aside.

5. In the same skillet, add chicken broth, Cajun seasoning, red pepper flakes, and lemon juice. Bring to a simmer and let the sauce reduce for about 5 minutes.

6. Return the shrimp to the skillet and toss to coat in the sauce.

7. Stir in the chopped parsley, and season with salt and pepper to taste.

8. Serve over cooked linguine pasta, and top with grated Parmesan cheese.
