Lasagna Soup

It was 67 degrees, people, so the other day as I left my house, I almost fell out because there was a significant cold in the air. And in Florida, too! Hehe, see, we don’t even see anything from the 1980s! I discovered that I was conducting pointless errands because I wanted to enjoy the cool weather outside. Then the afternoon arrived, and the temperature had returned to the nineties, terrible. Still, I can lose myself in my soups and stews and enjoy cosplaying as a Michigander. Yes, this soup made from lasagna is really delicious!

Ingredients Needed For This Lasagna Soup Recipe:

  • Oil: To brown the meat, I use olive oil.
  • Italian sausage: Use mild or spicy ground sausage while making Italian sausage.
  • Ground beef: The combination of ground beef and ground sausage—the chef’s kiss!
  • Onion: mmmm, we’ll sauté them till they’re soft.
  • Garlic: Almost all recipes benefit from a little garlic.
  • Tomato paste: the umami flavoring is so delicious since it’s extremely concentrated.
  • Crushed tomatoes: Much of the tomato taste in this recipe comes from crushed tomatoes.
  • Cozy spices: Warming spices include ground nutmeg (yes, it intensifies the tastes), smoked paprika, dried oregano, dried basil, chipotle powder, and salt and pepper.
  • Worcestershire sauce: So tasty and a great way to give soups and stews depth is Worcestershire sauce.
  • Lasagna strips: You need lasagna strips to create lasagna soup.
  • Chicken broth: The tasty liquid that helps the soup come together is chicken broth.
  • Also Ricotta cheese, mozzarella cheese, and parsley make up the cheese topping.

How To Make This Easy Lasagna Soup Recipe:

  • Add the oil to a large stockpot or Dutch oven set over medium heat. Once heated, mix in the ground beef and sausage, breaking up the meat with a wooden tool. Cook the meat for a further 7 to 8 minutes, tossing often, or until it is well browned and beginning to crisp up.
  • After that, add the chopped onion and sauté it for a further three to four minutes, along with the browned beef combination, until the onion is soft. Once fragrant, add the garlic and cook for an additional minute, stirring thoroughly to blend it with the meat mixture.
  • Add the tomato paste and stir. Next, include the crushed tomatoes, worcestershire sauce, oregano, basil, paprika, chipotle powder, nutmeg, and salt & pepper to taste. Mix everything up thoroughly. Stir thoroughly to mix in the broth and the broken lasagna pieces.
  • After lowering the heat to medium-low, simmer the soup for ten to fifteen minutes, or until the lasagna noodles are soft and well cooked.
  • To make the cheese topping, mix the mozzarella, ricotta, and chopped parsley in a medium-sized bowl. After giving the mixture a good stir, put it aside until the soup is done.
  • Spoon the lasagna soup into each serving bowl, then dollop some of the cheese mixture on top. The cheese topping will melt in the heated soup, creating a gorgeous fusion. If desired, garnish with freshly grated parmesan cheese. Whoa! 🤩

Tips + Tricks, FAQs & Recipe Variations

  • I know you don’t eat pork, therefore in that case, use just beef in the recipe. As an alternative, use ground turkey or chicken if you like to keep things more lean!
  • Let’s make vegetarian lasagna soup, of course! Use your favorite plant-based ground beef, sausage, or crumbles in place of animal ground meat if you want to stick to the meat-forward theme. Otherwise, use chopped carrots, mushrooms, zucchini, squash, etc. for the ground sausage and beef. Add the onion and garlic mixture and cook until it’s soft. You may use vegetarian broth instead of Worcestershire sauce and substitute tamari or coconut aminos.
  • Alright, so this lasagna soup is vegan! Use your favorite plant-based ground beef, sausage, or crumbles in place of animal ground meat if you want to stick to the meat-forward theme.
