Quick Chicken and Gravy

Here’s a quick and comforting recipe for Chicken and Gravy that you can enjoy over mashed potatoes or rice:

Ingredients:

  • Boneless, skinless chicken breasts
  • Onion, finely chopped
  • Thyme (fresh or dried)
  • Plain Greek yogurt (or sour cream)
  • Chicken broth
  • Flour
  • Olive oil
  • Salt and pepper

Instructions:

  1. Cut the chicken breasts into strips or small cubes for even and faster cooking.
  2. In a skillet, heat some olive oil and cook the chicken with onion and seasonings until browned. Set aside.
  3. In the same skillet, make a roux with flour and a bit of oil from cooking the chicken.
  4. Gradually add chicken broth to the roux, stirring continuously to avoid lumps.
  5. Once the gravy is smooth and thickened, return the chicken to the skillet.
  6. Stir in Greek yogurt for creaminess and simmer until the chicken is cooked through.
