– 4 large baking potatoes
– 1 tablespoon olive oil
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 4 slices bacon, cooked and crumbled
– 2 green onions, sliced
– 1/4 cup butter, melted
– 1/4 teaspoon garlic powder
Directions:
1. Preheat oven to 400°F (200°C).
2. Scrub the potatoes and pat dry. Prick them several times with a fork, then rub with olive oil and season with salt and pepper.
3. Place the potatoes on a baking sheet and bake for 50-60 minutes, or until tender.
4. Cut a slit in the top of each potato and gently squeeze the sides to open. Remove a bit of the flesh to create a cavity.
5. In a bowl, mix half of the shredded cheese, sour cream, bacon, green onions, melted butter, and garlic powder. Season with salt and pepper.
6. Spoon the mixture into the potatoes, then top with the remaining cheese.
7. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
