Caprese Pizza Bombs evoke a sense of nostalgia for me, not because my mom used to make these delicious bites with freshly rolled pizza dough when I was a child, but because I used to enjoy those frozen handheld pizza pockets filled with ultra-hot pepperoni.

However, these Caprese Pizza Bombs are a bit more sophisticated and boast more mature flavors. Yet, they maintain that incredible, satisfying bite where the cheese stretches endlessly. Plus, they undoubtedly triumph in the flavor department because, let’s face it, fresh mozzarella is leagues ahead of processed mozzarella (were the others even real mozzarella?).

These delectable Caprese Pizza Bombs are made possible by the generous folks at Stella Cheese, whose Fresh Mozzarella adds a brilliant touch to this recipe.

How To Make Caprese Pizza Bombs

  1. Preheat Oven: Begin by preheating your oven to 400 degrees Fahrenheit.
  2. Prepare Dough: Portion your pizza dough into 18 small balls and roll each one out into 4-inch circles.
  3. Fill Calzones: Place a cube of Stella Fresh Mozzarella Cheese in the center of each dough circle. Add a few shreds of fresh basil and 3-4 slices of cherry tomatoes on top of the cheese.
  4. Seal Calzones: Carefully gather the edges of the dough circle, bringing them together and pinching to create a good seal. Make sure to keep excess air out of the calzone as you seal it.
  5. Brush with Butter: Once all 18 calzones are prepared, brush them with melted butter. This step adds a nice flavor and helps them brown during baking.
  6. Bake: Bake the calzones in the preheated oven for 12-15 minutes or until they are nicely browned.
