- 4 boneless, skinless chicken breasts, baked until well cooked
- 8 ounces cream cheese, at room temperature
- 1 packet of taco seasoning
- 1 cup grated Fiesta cheese
- 8 to 10 corn tortillas

Directions:
Step 1: Preheat and Prep
- Preheat your oven to 350°F (175°C).
- Put 1 tablespoon of oil in a frying pan and set it aside.
Step 2: Prepare the Chicken
- After the chicken is completely cooked through, shred it using two forks.
- In a bowl, mix the cream cheese and taco seasoning until well combined.
- Stir the shredded chicken into the cream cheese mixture, ensuring the chicken is thoroughly coated.
Step 3: Warm the Tortillas
- Place the corn tortillas in the hot oiled skillet for just a few seconds to heat up. Remove the tortillas and set them aside, repeating with the remaining tortillas.
Step 4: Assemble and Bake
- Spray a baking sheet with non-stick spray.
- Put a spoonful of the chicken mixture in the center of each tortilla and roll it up.
- Place each rolled corn tortilla on the baking sheet.
Step 5: Bake and Add Cheese
- Bake in the preheated oven for 20 to 30 minutes.
- Remove the baking sheet, sprinkle the tortillas with the Fiesta cheese mixture, and return to the oven for another 5 minutes.
Step 6: Serve
- Remove the tortillas from the oven. Arrange the tortillas on a serving plate lengthwise in the shape of a circle, leaving the middle open.
- In the middle, place a bowl filled with diced tomatoes, salsa, sour cream, or guacamole.
- Add a layer of shredded lettuce around the tortillas if desired.
