And, while I adore shirred eggs, I wanted to develop a simpler version that was quick and easy to cook on weekday mornings, which is how these creamy spinach baked eggs came to be!

The simple combination of spinach, cheese, eggs, and cream produces a rich and creamy texture that pairs perfectly with a slice of crusty bread and is also high in protein, fiber, and healthy fats!

But the greatest thing is that this no-fuss dish is so simple to prepare that you can toss it in the oven, go about your morning, and return to a delicious restaurant-worthy lunch. So, if you’re searching for a fresh breakfast option, go no further than these spinach baked eggs!
