Creamy Tuscan Garlic Chicken

**Ingredients:**

– 1½ pounds boneless, skinless chicken breasts

– 2 teaspoons Italian seasoning

– Salt and pepper, to taste

– 1 tablespoon olive oil

– 2 tablespoons butter

– 1 small onion, diced

– 5 cloves garlic, minced

– 1 cup heavy cream

– ½ cup chicken broth

– ½ cup grated Parmesan cheese

– 1 cup spinach, chopped

– ½ cup sun-dried tomatoes, chopped

**Directions:**

1. Season the chicken breasts with Italian seasoning, salt, and pepper.

2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides and cooked through. Remove chicken and set aside.

3. In the same skillet, melt butter. Add onion and sauté until soft. Add minced garlic and sauté for 1 minute until fragrant.

4. Stir in heavy cream, chicken broth, and grated Parmesan cheese. Bring to a simmer and let sauce thicken slightly.

5. Add chopped spinach and sun-dried tomatoes to the sauce and simmer until spinach wilts.

6. Return the chicken to the skillet and spoon the sauce over the chicken. Cook for another 2-3 minutes to reheat the chicken.

7. Serve immediately.
