These sluggish stuffed mushrooms are a fantastic side dish! They are so simple to prepare that they will quickly become your new favorite side dish. I was interested by these mushrooms, and I’m pleased I made them! These could have been the greatest tasting mushrooms I’ve ever tried. I had to slightly modify the original recipe to make them lighter, but I swear they were delicious and will become a new regular in my home!
Lazy Stuffed Mushrooms Ingredients
- 1 pound white button mushrooms
- 2 tablespoons water
- 1/4 cup Italian-style breadcrumbs
- 2 tablespoons Parmigiano Reggiano cheese, grated
- 2 tablespoons Italian parsley, minced
- 1/4 teaspoon thyme, fresh or dried
- 3 cloves garlic, minced
- 1/4 teaspoon kosher salt
- black pepper , to taste
- 2 tbsp extra virgin olive oil
- olive oil spray
How To Make Lazy Stuffed Mushrooms
- Preheat the oven to 350 F degrees.
- Slice off the bottom of the stems, and then gently clean any dirt from the mushrooms with a damp paper towel.
- Depending on their size, cut the mushrooms into quarters or halves.
- Sprinkle 2 tablespoons water in the bottom of a 13 x 9 baking dish, then arrange the mushrooms in a single layer on top of the water.
- In a small bowl, add the following six ingredients, from breadcrumbs to salt and pepper. Spray the tops of the mushrooms with oil, then sprinkle the mixture evenly over them.
- Drizzle olive oil evenly over the top, then spritz with a bit extra olive oil spray to ensure it is equally covered. Bake the mushrooms uncovered for about 20 minutes, or until brown. Optional: broil for 1 to 2 minutes until golden. Serve hot or warm.
