Shaved Brussels Sprout Salad with Pears and Pomegranate

Shaved Brussels Sprout Salad

I adore raw shaved Brussels sprout salads and have been preparing them since Madison was a child. She adores them! Last year, I published this Fall Brussels Salad with Apples, but recently I’m really into this pear variation with pomegranate seeds. The ideal fall side dish to pair with your favorite protein. The colors are stunning, the pepitas provide the ideal crunch, and the goat cheese (or feta cheese) provides richness.

Why You’ll Love This Recipe

  • Colorful: This stunning Brussels sprout salad will look fantastic on your holiday table.
  • Hearty: Unlike green salads, leftover shredded Brussels sprouts will be delicious the next day.
  • Healthy: Brussels sprouts are abundant in fiber and protein, as well as vitamins C and K. The remaining components are all healthful, providing even more fiber and protein.
  • Easy: If you buy pre-prepared pomegranate seeds and Brussels sprouts, all you have to do is mix the vinaigrette, chop the pear, and combine everything in a dish.

Shaved Brussels Sprout Salad Ingredients

  • Dressing for Brussels sprout salad includes olive oil, chopped shallots, Dijon mustard, and apple cider vinegar.
  • Thinly shred 12 ounces of Brussels sprouts.
  • Salt and pepper to season the sprouts and vinaigrette.
  • Core and dice a big, juicy red pear.
  • Pomegranate Seeds: You may deseed a complete pomegranate yourself or get a cup of seeds at the shop.
  • Toast a quarter-cup of pepitas.
  • Use goat or feta cheese.

How to Shave Brussels Sprouts

You can buy pre-shredded Brussels sprouts at the grocery, but I like to prepare them myself to ensure they are fresh.

  • First, cut off the root end of each sprout. Then, use one of the two procedures below:
  • Divide the Brussels sprouts in half, then chop them vertically.
  • Shred the sprouts with a food processor’s slicing disk or cut them in half and finely slice them by hand.

How to Make Shaved Brussels Sprout Salad

  • Vinaigrette: In a small bowl, combine the olive oil, Dijon, shallots, and vinegar. Season with salt and black pepper.
  • Brussels Sprouts: In a mixing bowl, drizzle the dressing over the shaved Brussels sprouts and season with a quarter teaspoon salt and black pepper to taste. Toss thoroughly, then transfer to a large salad bowl.
  • Prepare the Salad: Garnish the sprouts with pears, pomegranates, pepitas, and goat cheese.

Variations

  • Substitute kale for the shredded sprouts.
  • Pear: Replace the red pear with a Bartlett or Bosc pear, or an apple like Pink Lady or Honeycrisp.
  • Pomegranates can be used instead of dried cranberries or dates.
  • For pepitas, use roasted pecans or walnuts.

How to Meal Prep Shaved Brussels Sprout Salad

If you’re serving it at a party or around the holidays, do these three things a day or two beforehand:

  • Shred Brussels sprouts.
  • De-seed the pomegranate.
  • Make a vinaigrette

On the day of your event, construct the salad a few hours in advance, but don’t chop the pear until just before serving. This substantial salad can last for up to two days in the refrigerator.
