Chicken and Shrimp Fiesta Bowl

Ingredients:

– 1 cup brown rice

– 2 cups water

– 1 tablespoon coconut oil

– 1/2 pound shrimp, peeled and deveined

– 1/2 pound chicken breast, cut into bite-sized pieces

– Salt and pepper to taste

– 1 red bell pepper, sliced

– 1 mango, diced

– 1 avocado, sliced

– 1/4 cup cilantro, chopped

– Juice of 1 lime

– 1 tablespoon soy sauce

– 1 teaspoon honey

Directions:

1. In a saucepan, bring the brown rice and water to a boil. Reduce heat to low, cover, and simmer for 45 minutes, or until water is absorbed and rice is tender.

2. Heat coconut oil in a skillet over medium heat. Season chicken and shrimp with salt and pepper. Add to the skillet and cook until the chicken is cooked through and the shrimp are pink, about 5-7 minutes.

3. Remove chicken and shrimp from the skillet and set aside. In the same skillet, add the red bell pepper and cook until soft, about 3-4 minutes.

4. In a large bowl, combine the cooked rice, cooked chicken, shrimp, red bell pepper, mango, avocado, cilantro, lime juice, soy sauce, and honey. Toss to combine.

5. Serve warm or at room temperature.
