A hearty bowl of beef stew is the perfect way to warm yourself on a cold day! It’s the ultimate comfort dish, full of tender meat and root veggies.
Ingredients:
– 2 pounds beef stew meat, cut into 1-inch pieces
– 1/4 cup all-purpose flour
– 2 tablespoons olive oil
– 1 large onion, chopped
– 3 cloves garlic, minced
– 4 cups beef broth
– 1 cup red wine (optional)
– 3 carrots, peeled and sliced
– 2 potatoes, peeled and cubed
– 1 cup frozen peas
– 1 teaspoon dried thyme
– 1 bay leaf
– Salt and pepper to taste
Directions:
1. Toss the beef stew meat with flour to coat evenly.
2. Heat olive oil in a large pot over medium-high heat. Add the beef in batches, searing on all sides until browned. Remove the beef and set aside.
3. In the same pot, add the onion and garlic, cooking until softened, about 3 minutes.
4. Return the beef to the pot. Add beef broth, red wine (if using), carrots, potatoes, thyme, bay leaf, salt, and pepper.
5. Bring to a boil, then reduce heat to low and simmer, covered, for about 1.5 to 2 hours, or until the beef is tender.
6. Add frozen peas and cook for an additional 5 minutes. Remove the bay leaf before serving.
