– 1 lb ground beef

– 2 large potatoes, peeled and cubed

– 1 onion, finely chopped

– 2 cloves garlic, minced

– 1 bell pepper, diced

– 1 can (14.5 oz) diced tomatoes, drained

– 1/4 cup raisins (optional)

– 1/4 cup green olives, sliced

– 2 tablespoons olive oil

– 1 teaspoon cumin

– 1 teaspoon oregano

– Salt and pepper to taste

– 1/2 cup beef broth or water

– Fresh cilantro for garnish

Directions:

1. Heat the olive oil in a large skillet over medium heat. Add the onions and garlic, sautéing until softened, about 2-3 minutes.

2. Increase the heat to medium-high and add the ground beef, breaking it apart with a spoon. Cook until browned.

3. Stir in the diced bell pepper, cumin, oregano, salt, and pepper. Cook for another 2 minutes.

4. Add the potatoes, diced tomatoes, beef broth, raisins, and olives. Bring to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the potatoes are tender.

5. Garnish with fresh cilantro before serving.
